New Years Day

Lamb Chops
Broccoli

Red Diamond Merlot

Lamb chops are sooo easy...3 min per side in bit of very hot oil in a cast iron pan. 😊

Olive oil, gallic tabasco sauce, salt, pepper, parsley, thyme. Marinate chops in frig over night.
Let chops warm to room temp.
Fry in cast iron pan with olive oil. It producds a lot of smoke...you will think you are burning, but you are not.
This finishes the chops to a wonderfull med rare center. Over cooking will ruin the chops.
They are tender and deliscious!

Cast iron pan...it makes it work.
Only 6 minutes of total cooking time.

Apple Pie for Desert.

Hi Mark. No, Sheri and I were somewhat too busy to mess with the grill today so we just roasted it in the Emeril Lagasse 360 air fryer oven. However, we did cook last year's larger roast on the bbq grill:

And, I must say that your lamb dinner looks very delicious and also that apple pie. Sheri and I usually only have lamb for Easter, so here is last year's Easter racks of lamb ready for the oven:

Hi all. With the lousy weather lately (even here in Florida), Sheri and I decided to put the air fryers aside and go back to an old fashioned slow cooked meal. So, we used the Hamilton Beach 7 qt. slow cooker and a 2.5 pound chuck roast, sliced Russet potatoes, sliced fresh and destringed celery, sliced baby carrots, and sliced sweet white onions. After 4 hours we had this:

Don't have a pic, but came across a really good IMO recipe for "Cheaters' Lasagna".

Get two bags of premade ravioli - they sell several different fresh, refrigerated versions here. Put a layer on the bottom of an olive oil coated baking dish, slather on some tomato sauce / red sauce and Italian cheese. Repeat layering until the dish is about 3/4 full to top. Add Parmesan to the top of the "cake" and bake.

Tastes quite good, takes about 1/8 the time it takes to make "real" lasagna, and you can mix and match varieties of ravioli to suit your taste. Next time, I'm going to add some fresh spinach between layers.

Hi all. Sheri and I cooked a grilled turkey breast tenderloin in the air fryer grill yesterday. There was enough left over today to make a turkey salad again (I did this after the Thanksgiving turkey). I thought I had better take a picture of it today and also include the recipe before we eat it all up. We like the chunky style rather than the shredded.

Recipe for this quantity:
2 cups chopped leftover turkey
1/4 cup of mayonnaise (add more if you want it creamier) Also, we like the olive oil mayonnaise
1 teaspoon of Coleman's dry mustard powder
1/2 teaspoon of fresh squeezed lemon juice
1/4 cup of de-stringed and diced celery
1/8 cup of sliced sweet white onions
1 teaspoon of paprika
1/2 teaspoon of tarragon
Stir thoroughly and refrigerate.
And you can change quantities or add other items to your tastes. Try it and I think you'll like it, as it makes a great snack.

This was a half of a cheese burger from a place in Mississippi. 6 slices of bacon . 2 . 1/4 lb beef Patty's 4 pieces of cheese and two grilled cheese sandwiches for bread.

This meal is from a peruvian place. Calamri , fish and scallops , yucca and red onion and tomato salad with civichi and lemon and salt for dressing. Delicious.

Hi Rich. Wow, that looks like a very tasty roast. Sheri used to keep the seasonings on the stove but we had too many and she didn't like the small bottle racks you see in the store. So, I got some rosewood from the Lowe's lumber section and built our own. I measured it from the top of the counter back splash to the cornice at the top and from the edge of the cabinet to the doorway opening leaving about 1" of space.

Big spices on the stoves console are the ones that don't fit in the spice drawer or cabinet. Very nice spice rack sir.

Taco Casserole - My wife has modified this so many times I don't know what the original recipe was but this is what she did yesterday (YMMV)

1.5 lbs of ground beef with onions, browned
1 can of corn
1 can of beans (black or kidney, it's your dinner)
1 cup of mayonnaise (or Miracle Whip)
1.5 cups of medium salsa
1 bag of Tortilla Chips
1 package of Taco Seasoning
1 package of shredded cheddar or Mexican cheese blend
Oil or cooking spray

Cook the ground beef and onions, drain, put in a large mixing bowl
Add the corn and beans
Mix in the mayo and salsa. Use enough so all the other ingredients are fully coated. It's okay if there is excess moisture because the chips will absorb it.
Add Taco Seasoning, stir, adjust for taste. My wife used about a third of the package. This isn't meant to be very spicy so you can use the whole package if that's what you like.

Spray a 9 x 13 baking dish with cooking spray or oil
Cover the bottom with about 1/4" of loosely crushed tortilla chips
Add layer of the filling mixture, about an inch
Sprinkle with shredded cheese
Repeat - You should have enough for a second layer in this size dish
Spray the top with a little olive oil to keep it from getting too dry.
Add a little extra cheese to help hold it together.

Bake at 350 F for about 45 minutes
Any metaphor will tear if stretched over too much reality.

Actually Zachary's is based in the Bay Area (4 locations). I've had Lou Malnati's in Chicago and that was a bit better.
