Does / has anyone used a 1.25" to 2" adapter in their telescope in order to utilize their 2" eps in their 1.25" scope ?

I did not even know such a thing exists though I rarely use 2" eyepieces.
As long as the adapter has a decent clear aperture and the eyepiece field stop is smaller than that it should work fine.

I know such things exist. However, they could be problematical in some scopes. The adapter will place the eyepiece farther out from the focuser than it is designed for. The focuser may not have enough inward travel to accommodate the extra length.

Many years ago I had a small refractor which used the Japanese standard eyepieces so I bought a step up adapter. Remember that we are only going from .965" up to 1.25". And I was limited to the focal length eyepieces I could use because of focuser travel distance. And you might have a lot of image vignetting in your view. You haven't told us what kind of telescope that you have so it is hard recommend much right now. I can tell you that my two current refractors both had a removable reducing ring at the back of the focuser to allow me to install 2" diagonals, which both came with a 2" to 1.25" easily removable reducer ring at the top. So now I can use any of my eyepieces in these two scopes. I hope this helps and the best of wishes on your project.
