Interesting idea and so simple.

I built my own 3 axis gyroscopic stabiliser in 2013 in preparation for photographing the the November 2013 total eclipse from a yacht in the Atlantic Ocean (SW of Cape Verde Islands). I eventually decided to leave it at home primarily because the weight of the unit became a bit too much for air travel getting to and from the ports of departure and arrival for the yacht.

I haven't tried it in years. I should dust it off and try it with binoculars.
