Hi all. Tonight we had roasted salmon and fresh cut green beans. This was our first meal with the new Emeril Lagasse Power Air Fryer 360. We waited until after Christmas to buy it and got the deluxe model for a very huge savings. Here is the new air fryer:

The roasted salmon coming right out of the cooker:

and everything plated up:

Everything was ready in just 20 to 22 minutes. We really love this new kitchen appliance addition to our collection.

Hi all. Sorry to come in so late with this recipe. Sheri just reminded me of how great this was years ago for a Superbowl Sunday. Start early, as a lot goes into the preparation, and you may have to buy some groceries.

My sister is making her renowned marinated catfish for dinner this eve, which has old bay seasoning and a variety of other spices. Fried in the skillet, it is delicious. I also have the z10 set up already for some family outreach - her son is also coming over for the meal.

Hi all. Sheri and I made a huge chicken, fettuccine noodle, mixed vegetables, and cheese casserole this evening. First fry the cut chicken in peanut oil with a dash of kosher salt and paprika, boil the noodles with a dash of olive oil and kosher salt. Make a table of the noodles, add the chicken, cream of mushroom soup, mixed vegetables, fresh ground black pepper, a little milk, and grated parmesan cheese. Stir mixture thoroughly and then bake at 400 degrees for about 25 minutes. A couple of minutes before it is done, add the shredded cheddar cheese for the topping.

Looks good Marshall. Our last air fryer drew so much power we couldn't use any of the other counter-top appliances at the same time. The new one seems more efficient and I'm still getting the hang of it.

Any good air fryer ideas you come across, I'd like to see here.

Clear skies!

Anybody have a good seitan recipe? Trying to cut back on meat and tofu is not quite satisfying enough.

Hi Olen. Here is something that I posted for SkyHiker (Henk) about 3 months ago using portobello mushroom caps on the charcoal grill:
"Hi Henk. Here is something that works for me. I am not a vegetarian or vegan, but I often dive into the "greens" first before the main meat course. This is the one meat free recipe that I really like. Get a package of the large portobello mushroom caps, give them a few drops of lemon juice to cut some of the mushroom oils, a light brushing of Worcestershire sauce, a sprinkle of tarragon, and place on the bbq charcoal grill or in a basket. You can later add your hamburger buns or brioche buns for a toasting. Bring inside and add lettuce and tomato and by golly molly it tastes just like a beef hamburger. Alton Brown (of the Good Eats program) calls this the "meat mushroom"."
Now, here is a recipe that you can use with your kitchen oven and it includes a nice mayonnaise sauce too:
Mushroom Burger1.jpg

You will have adjust your kitchen oven cooking time, as this recipe is for an air fryer oven. I hope this helps you a little Olen, and the best regards.

Hi Marshall, I would like to try that mushroom burger at a BBQ party some time. Right now I am being practical and cook for the whole week at once. Typically, I get the $5 Costco chicken once a week. After eating a leg I take the meat of the carcass, cook it in a nonstick pan without oil, and cook some mushrooms separately in a wok in olive oil with some pepper. Then add I garlic, pesto, lemon, hot pepper salsa, tomatoes, and marinara to the chicken and throw the mushrooms in there later on. I usually add broccoli or green beans on top and let it simmer for a while. It's low fat and delicious with pasta usually with some microwaved veggies (broccoli or spinach). Then I have Greek yogurt with peach halves for dessert. I never get bored with it, I could eat that all year. Once in a while I make a crockpot with lean pork, cabbage, curry and potatoes, etcetera to alternate.

Now that I'm on my winter vacation, and It'll be cloudy for the rest of the week (and my vacation), I decided to make some real food instead of the typical "belly-fill". Moose top side roast made into beefs with salt and black pepper only. Boiled potatoes and carrot slices, and basic brown sauce with salt, black pepper, cream, red wine and a bit of mint.

The moose was shot by my father, who still, at an age over 80, still can, and likes to, hunt mooses and deers.
IMG_0758.JPG
The "dog tax" was the same, except the meat wasn't seasoned, and the sauce was taken before adding the wine and seasoning into it. I guess not many dogs get meals like this.
