Haven't tried it yet, but I found a one-pot Dutch oven recipe for red beans and rice. I think I could turn vegetarian eating that and pita with tzatziki.

Not yer Momma’s Meatloaf
My wife and I wanted our own special style Meatloaf when we got married. We didn’t want Mommas boring style.
It’s on the menu tonight.

Method is hard to see.
Mix, shape in loaf pan bake in 350degree oven for 1 hr 20minutes. Top with salsa after cool.

It’s Thursday. The girls go to skate lessons. I’m on my own for dinner.

Nuke it for 1 minute

I made a pot of sausage and sauerkraut Sunday and we're still eating from it. We usually use a 50/50 mix of German and Polish 'kraut and same with smoked and Polish sausage. Add sliced sweet onion, a package of mushrooms, and a few potatoes for ballast. Simmer on low heat until the veggies are done. Sometimes I throw in a few carrots for color.
Any metaphor will tear if stretched over too much reality.

Just sauteed the 92 percent ground beef with half an onion, a whole small bell peeper, garlic powder, and a little black pepper. The sauce is not home made, but very good. It is a chain supermarket organic brand.

My "special treat" for the holidays was to try out the non-meat burgers from Impossible and Beyond, and the sausages from Beyond. I had tried Beyond patties from Costco before and was not overly impressed but this time it was wrapped as ground meat enough for 3 patties. I liked this better than the individually packaged ones from Costco to the point where I would say, not bad. But also not great. The Impossible ones tasted better though, almost like real meat - but not quite, still. Both of them were incredibly greasy to make though. I just tried the Beyond sausage and while it is filling, it doesn't taste like much at all.

So much for a special treat, well I had plenty of other good food too. The goal of this is to try cholesterol-free alternatives. As it turns out, they are high in saturated fats (25% DV for a portion). This is the same with vegan cheese, of which by the way there some that are very good and hard to tell from the real thing. So, I may try the Impossible ground meat and perhaps Beyond if I can't find them in the store but the sausages, nah.

For Christmas I made a boiled dinner of corned beef and cabbage plus my usual extra veggies.

Since it's now Jan 2, my wife decided to get rid of all the leftovers at one stroke. So we have:

Corned Beef and Cabbage Chowder from Leftovers

Since she feels that recipes are merely for inspiration, she also -

Sautéed additional onions and mushrooms; cut up the already cooked cabbage and carrots and corned beef.

Garlic powder, onion powder, lemon pepper with a dash of basil.

Substituted beef broth with the liquid from the corned beef and cabbage dinner.

Added 4-5 oz of shredded cheese

I'm going back for seconds now. :clap:
