Tonight, Sheri made her fantastic stuffed green peppers with a slice of cheddar cheese and a slice of fresh tomato on top. Just look at the cheese oozing through the tomato veins. These make an entire meal.

65 years ago my dad and his buddies used to drink at the Tree Tavern in Paterson NJ.
They also were known for their bar pies, they started freezing them in the 1950s, and still to this day they have kind of a cult following.
They were the first frozen pizza available in a supermarket.

Brought this one back to NC on my recent trip to NJ.

NJ bar pies are very thin, they became famous in the 50s and 60s and are still popular today.
They are similar to a regular NY/NJ pie to some extent, but were prepared ahead of time, then ran through a motorized toaster for the bar patrons.

Tree Tavern, was the first frozen pie sold in supermarkets.

Nothing of course beats a real pie!

Hi Jeff. Well, that looks might tasty. Back in the mid 1950's before frozen pizzas were widely available in the supermarkets, my mother used to make homemade pizza from the Appian Way pizza mixes in the box.

Ah, Paterson, NJ, home of the great Lou Costello of the Abbott and Costello comedy team. On a couple of occasions, Lou would make mention of Paterson, NJ in their movies. I wonder if Lou ever went to the Tree Tavern before he left for Hollywood? Also, here is a joke from one of their TV shows.
Lou and Bud Abbott are walking down the street while Lou was upset about possibly losing his girlfriend Hillary Brooke. Lou slowed down when they got to a bar and was about to go in when Bud stopped him and said:
Bud: "Wait Lou. Don't you know that every time you go into a bar, the devil goes in with you?"
Lou: "Well if he does, he will have to buy his own drinks."

Sheri and I cooked Cornish hens on the air fryer rotisserie. Brush on some olive oil, season with kosher salt, ground black pepper, and parsley. Place on the spit and tie the legs and wings with butcher's twine (also called rotisserie twine) and cook at 350 degrees for 90 minutes. Remove from air fryer and let them rest for a few minutes. Remove them from the rotisserie spit, cut the twine, and slice them in half lengthwise. Plated up with some nice long grain and wild rice:

Sautéd Pork Belly and Mixed Greens

A quick, simple but delicious meal.
Serves 2-3 as described, more if served with rice.

Ingredients
2 Pork belly strips (160g). Cross cut into 12mm(1/2in) pieces
1 Spanish Onion. Sliced
2 clove garlic diced
Greens, you can use any greens you have
I used pieces of
I stalk of Bok Choy, Chopped
4-6 florets of Brocolli Chopped
4 Brussels sprouts cut into quarters
Olive oil

Seasoning
Salt and pepper to taste
Turmeric
Thyme
Oregano
fennel seed

Method

Season the pork with the seasoning and sauté gently in olive oil until golden brown with the fat rendered.
Add in the Spanish onion and continue until the onion is past translucent and just beginning to caramelise.
Add in the greens and toss through the hot oil. Add the garlic and toss then add 1/3 cup water and cover to simmer for 5-10 mins.

A healthy multi grain - smaller sized

A mild chedder or processed one per bread
2 bacon strip to perfection made to four pieces

Walmart had some chicken thighs on sale. Got a pack and fried them up. A sprinkling of salt and pepper covered with unbleached flour. Then fried in olive oil. Rice with dark kidney beans with added turmeric, garlic, sea salt, and butter. When I have a meal with no vegetables I always have a vegetable smoothie afterward. Left click the image.

You guys are making me feel bad. The only original thing I've done in weeks is to add a strip of bacon to a hot dog!

With the arrival of autumn, we'll be getting back into the kitchen more and we can see what transpires.

Chicken stewed with potatoes, celery, garlic, poultry seasoning, sea salt, and black pepper. I could not find the potato peeler so I gave the skins a good scrubbing. This was a very good meal. My body was telling me to eat some potatoes. This is a video of the beginning of the stewing. Thirty minutes later it was thick, rich, and good. Change the resolution to 720.

Here is another recipe to try using Kale...

Baked Kale Chips (we would call them crisps).

Ingredients:

* 1 bunch kale
* 1 tablespoon olive oil
* 1 teaspoon seasoned salt

Recipe:

* Step 1 - Preheat an oven to 350 degrees F (175 degrees C). Line a non- insulated cookie sheet with parchment paper.



* Step 2 - With a knife or kitchen shears carefully remove the leaves from the thick stems and tear into bite size pieces. Wash and thoroughly dry kale with a salad spinner. Drizzle kale with olive oil and sprinkle with seasoning salt.



* Step 3 - Bake until the edges brown but are not burnt, 10 to 15 minutes.

With the cost of chicken wings these days I decided to keep the wing tips for soup. Used pasta for the noodles with turmeric, garlic, poultry seasoning, sea salt, and the chicken flavoring from two packages of ramen noodles. This was a real good hearty meal. Ramen noodles make me sick. So I never use them. Left click the image.

Not recipe, more of a safety tip. I made a batch of soup over the weekend, trying to use up all of my ageing vegetables. I had about 3/4 of a pound of Brussels Sprouts that were going to go bad soon so I chopped them up and tossed them in as well. They overwhelmed all the other flavors. Fortunately my wife is travelling on business so it's just me and my odd soup for the next few days.
Any metaphor will tear if stretched over too much reality.
