Hi all. I had to cook this earlier today before the daily afternoon/evening thunderstorms arrived here in Florida again. A nice 2 and a half pound sirloin tip beef roast cooked out on the charcoal grill. Well, here's whats left of it.
Plated up with homestyle mashed potatoes with some creamery butter and paprika, brown gravy, and lima beans with butter and summer savory seasoning.

I am not much of a beef eater. I grew up poor, so we just did not eat much of it. Had a taste for some sirloin, so I got some. The meat was sprinkled with sea salt, black pepper, and garlic. I sauteed the meat in a little olive until medium well. It was served with onions and jasmine rice. A very good meal. Right click the image.

Deviations from the recipe: extra bacon, chopped grilled chicken, sliced cremini mushrooms, no half-and-half so I reduced the chicken stock and increased the milk.
Served with the last bit focaccia from last weekend.

We don't like sage or cumin. Usually add extra garlic or some sort of vegie. Sometimes mushrooms, sometimes corn. It's a great dish to experiment with.
Any metaphor will tear if stretched over too much reality.

Egg Roll In A Bowl aka Crackslaw.
2Tbsp sesame oil
2 cloves chopped garlic (1tsp)
1 lb ground beef
1 package of coleslaw mix (14 oz)
2 tbsp soy sauce
1/2 tsp sriracha
1/4 tsp Splenda liquid sweetener
1/2 tsp ground ginger
1 tsp vinegar
FInale: 1/2 tsp pepper
1/2 tsp salt
1 tsp sesame seeds (optional)
Method:
Measure out seasonings ahead and set aside.
Sautée, in a large frying pan, garlic in sesame oil.
Add ground beef, cook until done. Do not drain fat.
Add coleslaw mix, soy sauce, Siracha, Splenda, ginger, and vinegar. Sautée on medium high for 5 minutes, stirring occasionally.
Remove from burner and add pepper, salt. (Sesame seeds if desired). Stir again to blend in.
Serve in a bowl with a fork or spoon.
Serves 4
339 calories
Only 4.9g carbs
Protein 21g
Fat depends on quality of ground beef.
Pic is tomorrow’s lunch (leftovers).

Taco Tuesday!
We use the Old El Paso mix.
We make it Keto.
I don’t drain the fat off the beef.
I make my taco shell out of baked cheddar cheese.
I spread out 1/4 cup on a piece of parchment paper in a circle and bake for 10 minutes. Cool, fold in shape. I put a romaine lettuce leaf on the shell before meat to prevent it from breaking, due to heat.
Leftovers are next day lunch in a low carb tortillas wrap. lunch on

Beef Stew
I started with the recipe on the back of the McCormick Beef Stew seasoning package but I made the "usual" improvisations.
swapped out the stew meat for beef chuck
I dredged the meat in the flour I'd saved from the last batch of swiss steak so it had some smoked paprika in it.
added 3-4 tablespoons of Worcestershire sauce to the oil while browning the meat
For veggies I added a bag of potato medley (white, red, and purple), about 12 oz of mushrooms, two large sweet onions, and about 1/2 pound of carrots
Gave it a few good shakes of onion powder just for the heck of it.

Pork Spare Ribs With Pumpkin And Spinach
Ingredients (serves 2-3 or more if served with rice or other veges)
• 2 pork spare ribs cut into 2 cm lengths. Pieces with bone can be left bigger.
• 1 onion or leek diced
• 2 x 2cm slices of a small pumpkin diced into 2cm squares
• 1 red capsicum cut into 2 cm squares
• 1 bunch English spinach chopped coarsely

Aromatics
• Olive oil 3 tblsp
• Sweet sherry or white wine -1/2 cup
• Tumeric 1 tsp
• Garlic 1 clove diced
• Cardamon 6 pods cut open
• Salt (to taste)
• Thyme leaves 1/2 tsp
• Fennel seeds 3/4 tsp
• Fresh rosemary – leaves from half a sprig
Place dry turmeric & fennel seeds in large frypan. Heat to dry toast then add olive oil.
Add pork, cardamom, rosemary, thyme and fry on high heat until pork is golden brown.
Add the onion and capsicum continue to fry on high heat.
Add the pumpkin. When the diced pumpkin just starts to blister, add spinach garlic and salt to taste.
When the spinach wilts, add sherry, turn to low temperature, part cover and simmer 10-15 mins until liquids reduce to a thick sauce.
Serve as a stand alone meal or with rice or with other greens to make it go further.

It is really delicious!
The pork belly fat isn't the healthiest but when eaten as a complete meal without added carbs, there's more vegetables than meat. That's my excuse! ;-)

No pics needed. We did a healthy dinner of chicken and veggies but ... I did French fries in the air fryer.
PSA: The air Fryer is worth it just for making French fries and re-heating deep dish pizza.
