Hi Refractordude. Sheri usually bakes the chicken breasts with peanut oil and seasonings, while the rice and chopped onions are boiling on the stove. Later, she replaces the chicken on top of the rice and continues the baking in the pan with the chicken juice and sometime some chicken stock. The next time that we make this, we may use these other vegetables, and I will add a photo. Thanks Refractordude and the best of regards.

Hello Refractordude and all. I promised you that the next time we make baked chicken breasts over rice, that I would take a picture. We partially sauteed the diced onions and also the sliced green peppers to add more color and flavor. Later, we pulled the chicken from the pan and made a bed of the cooked rice in the pan, with a slight amount of sweet paprika, and put the chicken back on top and continued the baking process until done. And, here it is:

Barbacoa-Style Shredded Beef in the Slow Cooker.

This is tonight's dinner which has been bubbling away since 10am.

1. Season beef chunks with salt and pepper on all sides.
2. Heat olive oil in a large skillet over medium-high heat. Add beef in batches; cook until browned, about 2 minutes per side. Transfer beef to the slow cooker.
3. Combine beef broth, apple cider vinegar, lime juice, chipotle peppers, garlic, cumin, oregano, and cloves in a bowl. Season with salt and pepper and mix well. Pour over beef in the slow cooker. Stir in Bay leaves.
4. Cook on low until beef is fork-tender, about 8-10 hours.
5. Discard Bay leaves. Remove beef and shred using two forks. Return beef to slow cooker to marinate in the sauce for at least ten more minutes before serving

Place over rice, stuff in tortillas or whatever you feel like. I am using fajita tortillas with lettuce, tomatoes, onions, and Queso Queso cheese. Should be good.

Wash down with a nice lager of your choice.

Tonight Bonnie has prepared a masterpiece.

We have a main course of Kosher Hotdogs, with a perky Broccoli, Apple, and Craisin salad.
And we have our favorite bruschetta and fresh mozzarella to top things off. 😊

Well I'm running low in the pantry and I don't get paid until Friday, but then I'm gonna probably make my first meal after that in the slow cooker. Like chili. Or grilled cheese chili. :lol:

After a good heavy duty hike up Gaviota peak I felt feverish when I stopped at the store on the way back. I got a gallon bucket of vanilla ice cream and bananas against the cramp that I felt in the hot springs on the way down where I spent over an hour. One bowl of vanilla ice cream with mashed bananas, and one more with apple cider, made me feel great, super. I just needed something sweet. Topped it off with chips and salsa and numerous glasses of wine along the way, life is good!
