Reminds me of my grandmother. She was a farm woman, cooking on a wood stove. During the Great Depression she sold bread for 40 percent more than the next folks because hers was that much better. Sounds like mine.

I watched a show about Texas BBQ last night on Netflix. "Miss Tootsie" has been cooking for 60 years and adjusts the heat on her grills by how hot they feel. No digital thermometer nonsense for her. She also shovels wood coals by hand to provide the heat.
